  • 2 medium baking apples (peeled and chopped)
  • ½ cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg (room temperature)
  • ⅓ cup white granulated sugar
  • ¼ cup vegetable oil
  • ¼ cup full-fat sour cream (room temperature)
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 3 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with vegetable oil.
  2. In a bowl, combine chopped apples with ¼ cup brown sugar and 1 teaspoon cinnamon; set aside.
  3. In a large bowl, whisk the egg until frothy; then mix in remaining granulated sugar, vegetable oil, sour cream, and vanilla until smooth.
  4. In another bowl, whisk together flour, baking soda, salt, remaining cinnamon, and ginger.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Fold in the coated apples gently.
  7. Pour batter into greased loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  8. For the glaze, whisk together sifted powdered sugar, vanilla extract, and milk until smooth.
  9. Drizzle glaze over cooled bread before slicing.
