  • 1 cup low sodium chicken broth
  • 1 cup BBQ sauce (divided)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts or thighs
  • Burger buns (optional for serving)

Instructions

  1. In the Instant Pot, whisk together the chicken broth, ½ cup BBQ sauce, apple cider vinegar, garlic powder, chili powder, salt, and pepper until combined.
  2. Add the chicken to the sauce mixture and ensure it’s well coated.
  3. Close the lid and set the valve to sealing. Cook on high pressure for 16 minutes.
  4. Allow the pressure to release naturally for 10 minutes before venting any remaining steam.
  5. Check that the chicken has reached an internal temperature of at least 165°F. Remove and shred with forks, mixing in some of the sauce from the pot along with more BBQ sauce if desired.
  6. Serve on burger buns or enjoy in various dishes like tacos or salads.
