- 4 salmon fillets (about 6 ounces each)
- 1 cup fresh pineapple chunks (or canned, drained)
- ¼ cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a medium bowl, combine the pineapple chunks, soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Mix well.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 10 minutes to absorb the flavors.
- Preheat your oven to 400°F (200°C).
- Place the marinated salmon fillets on a lined baking sheet. Reserve the marinade for later use. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork.
- In a small saucepan, heat the reserved marinade over medium heat. Let it simmer for about 5 minutes until slightly thickened.
- After baking, remove the salmon from the oven and brush the thickened glaze over each fillet.
- Optional – for a caramelized finish, broil the salmon for an additional 2-3 minutes, watching closely to avoid burning.
- Remove from the oven and sprinkle with sliced green onions and sesame seeds for added flavor and presentation.
