Mini Jalapeño Popper Egg Rolls are a tasty twist on the classic appetizer.

- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños (fresh or pickled)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package egg roll wrappers
- Vegetable oil, for frying
Instructions
- In a mixing bowl, combine the softened cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Prepare Egg Roll Wrappers: Lay out your egg roll wrappers on a clean surface, with one corner pointing towards you.
- Fill the Wrappers: Place about 1-2 tablespoons of the cheese filling in the center of each wrapper.
- Roll the Egg Rolls: Fold the corner closest to you over the filling, then fold in the sides. Roll tightly away from you to form an egg roll. Seal the edges with a little water.
- Heat the Oil: In a deep frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
- Fry the Egg Rolls: Carefully place a few egg rolls in the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown.
- Drain Excess Oil: Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Repeat: Continue frying the remaining egg rolls in batches until all are cooked.
- Let Cool Slightly: Allow the egg rolls to cool for a few minutes before serving.
- Serve Warm: Enjoy them fresh from the fryer for the best flavor and texture.
