Ingredients

  • Russet or Yukon Gold potatoes, peeled and diced into small cubes
  • Breakfast sausage or bacon, chopped into bite-size pieces
  • Onions, chopped
  • Bell peppers, chopped
  • Eggs (optional), to crack on top
  • Olive oil or butter, for cooking
  • Garlic powder
  • Paprika
  • Salt
  • Pepper
  • Parsley or chives, chopped for garnish

Instructions

  1. Peel and dice the potatoes into small cubes for even cooking. Chop onions, bell peppers, and meat into bite-size pieces to ensure uniform cooking and easy eating.
  2. Heat olive oil or butter in a skillet over medium heat. Add the sausage or bacon and cook until browned and crisp. Remove the meat, leaving the rendered fat in the skillet for cooking the potatoes.
  3. Add the diced potatoes to the skillet, spreading them evenly. Cook without stirring too often for about 10–12 minutes, flipping halfway through, to form a golden crust.
  4. Stir in chopped onions and bell peppers once the potatoes are crispy. Cook for another 5 minutes until the vegetables are soft and fragrant.
  5. Return the cooked meat to the skillet and mix it with the potatoes and vegetables. Evenly sprinkle garlic powder, paprika, salt, and pepper. Cook for a few more minutes to allow the flavors to meld together.
  6. Create small wells in the skillet and crack eggs into each well. Cover and cook until the egg whites are set, but yolks remain runny, or cook to your preferred doneness.
