- 4 cups chicken broth
- 1 (28 ounce) can crushed tomatoes
- 18 ounce package refrigerated cheese/spinach ravioli
- 2 cups fresh chopped spinach
- 1 cup heavy cream
- Kosher salt
- Fresh cracked pepper
- Shaved Parmesan
- Fresh chopped parsley
Instructions
- Heat olive oil in a large pot over medium-high heat until shimmering.
- Sauté diced onion with salt and pepper for 3-4 minutes until softened.
- Stir in minced garlic and Italian seasoning, cooking for 30 seconds.
- Add chicken sausage, crumbling as it cooks until browned.
- Combine chicken broth and crushed tomatoes, seasoning with salt and pepper.
- Add ravioli and bring to a simmer over medium-high heat.
- Reduce heat to low and simmer for 3-5 minutes until ravioli are al dente.
- Stir in chopped spinach and heavy cream until the spinach wilts.
- Season to taste; garnish with Parmesan and parsley before serving.
