Ingredients

  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces chicken Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper
  • Shaved Parmesan
  • Fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat until shimmering.
  2. Sauté diced onion with salt and pepper for 3-4 minutes until softened.
  3. Stir in minced garlic and Italian seasoning, cooking for 30 seconds.
  4. Add chicken sausage, crumbling as it cooks until browned.
  5. Combine chicken broth and crushed tomatoes, seasoning with salt and pepper.
  6. Add ravioli and bring to a simmer over medium-high heat.
  7. Reduce heat to low and simmer for 3-5 minutes until ravioli are al dente.
  8. Stir in chopped spinach and heavy cream until the spinach wilts.
  9. Season to taste; garnish with Parmesan and parsley before serving.
