  • 2 large bananas (mashed)
  • 1 large zucchini (shredded)

Instructions

  1. Preheat the oven to 180C/350F and line a 9 x 5-inch loaf pan with parchment paper.
  2. In a mixing bowl, combine the flour, coconut sugar, baking powder, baking soda, salt, and cinnamon; whisk until well mixed.
  3. In another bowl, whisk together the egg, Greek yogurt, and mashed bananas until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined. Gently fold in the shredded zucchini and your chosen mix-ins.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 45-55 minutes or until a skewer inserted into the center comes out mostly clean.
  7. Let cool in the pan before slicing and enjoy!
