- 1 1/2 cups all-purpose flour (or whole wheat flour)
- 1/2 cup coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 large egg
- 1/2 cup Greek yogurt
- 2 large bananas (mashed)
- 1 large zucchini (shredded)
- 1/2 cup mix-ins (such as chocolate chips or walnuts)
Instructions
- Preheat the oven to 180C/350F and line a 9 x 5-inch loaf pan with parchment paper.
- In a mixing bowl, combine the flour, coconut sugar, baking powder, baking soda, salt, and cinnamon; whisk until well mixed.
- In another bowl, whisk together the egg, Greek yogurt, and mashed bananas until smooth.
- Fold the wet mixture into the dry ingredients until just combined. Gently fold in the shredded zucchini and your chosen mix-ins.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 45-55 minutes or until a skewer inserted into the center comes out mostly clean.
- Let cool in the pan before slicing and enjoy!

- Feel free to substitute the coconut sugar with brown sugar if desired.
