- 7 oz vegan cream cheese
- 6 oz vegan chicken cubes
- 3 cups vegetable broth
- 2 ribs celery, chopped
- 1/4 cup carrots, shredded
- 1/3 cup onions, finely chopped
- 3 cloves garlic, diced
- 1 handful spinach
- 2 Tbsp olive oil
- 1 tsp Italian herbs
- salt, pepper to taste
Instructions
- Sauté diced celery, garlic, and onions in olive oil over medium heat for about 2 minutes until softened.
- Add vegan chicken cubes; season with salt and pepper. Cook for another 3 minutes until they slightly brown.
- Pour in vegetable broth; bring to a boil. Add gnocchi and cook for 2-3 minutes until they float.
- Stir in vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach; heat through for another 2 minutes.
