  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 3 cups vegetable broth
  • 2 ribs celery, chopped
  • 1/4 cup carrots, shredded
  • 1/3 cup onions, finely chopped
  • 3 cloves garlic, diced
  • 1 handful spinach
  • 2 Tbsp olive oil
  • 1 tsp Italian herbs
  • salt, pepper to taste

Instructions

  1. Sauté diced celery, garlic, and onions in olive oil over medium heat for about 2 minutes until softened.
  2. Add vegan chicken cubes; season with salt and pepper. Cook for another 3 minutes until they slightly brown.
  3. Pour in vegetable broth; bring to a boil. Add gnocchi and cook for 2-3 minutes until they float.
  4. Stir in vegan cream cheese, sour cream, shredded carrots, Italian herbs, and spinach; heat through for another 2 minutes.
