Instructions

  1. For the crust: In a medium bowl, mix the graham cracker crumbs, melted butter, and honey until combined. Press the mixture into the bottom of a 9×9-inch baking dish to form an even crust.
  2. In another bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract. Stir until smooth and well blended.
  3. Pour the peanut butter yogurt mixture over the graham cracker crust, spreading it evenly with a spatula.
  4. Sprinkle mini chocolate chips on top (if using) and gently press them into the mixture.
  5. Freeze for at least 4 hours, or until the bars are firm and set.
  6. Once frozen, cut into squares or bars and serve immediately. Store any leftovers in the freezer.
