- 12 medium to large button mushrooms, cleaned and stems removed
- 3 large yellow onions, thinly sliced
- 3 garlic cloves, minced
- 3 tablespoons butter
- 1/2 cup beef or vegetable broth
- 1 teaspoon fresh or dried thyme
- Salt and pepper, to taste
- Stems from mushroom caps, finely chopped
- 1 cup Gruyère cheese, sliced or shredded
Instructions
- Carefully clean and dry the mushrooms, then gently remove the stems and set them aside.
- Heat butter in a large skillet over medium-low heat. Add thinly sliced yellow onions and a pinch of salt, cooking slowly for about 25-30 minutes until the onions develop a deep golden brown caramel color.
- Once onions are caramelized, add minced garlic and cook for one more minute. Pour in the broth and sprinkle thyme, then simmer until the mixture reduces slightly and thickens.
- Chop the reserved mushroom stems finely and fold them into the onion mixture. Spoon the savory filling generously into each mushroom cap.
- Arrange the stuffed mushrooms on a baking sheet. Cover each with a slice or sprinkle of Gruyère cheese. Bake at 375°F (190°C) for 15-20 minutes.
