- 2 lbs beef short ribs
- 3 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 6 slices of baguette or crusty bread, toasted
- 1 1/2 cups shredded Gruyère or Swiss cheese
Instructions
- Sear the beef short ribs in olive oil over medium-high heat until browned on all sides. Remove and set aside.
- In the same pot, melt butter and caramelize sliced onions for about 25-30 minutes until golden brown. Add minced garlic and cook for another minute.
- Return short ribs to the pot along with beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Simmer covered on low heat for 2-3 hours until ribs are tender.
- Shred the meat and return it to the soup. Ladle into oven-safe bowls topped with toasted baguette slices and cheese.
- Broil until cheese is melted and bubbly, then serve hot.
