Ingredients

  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear the beef short ribs in olive oil over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, melt butter and caramelize sliced onions for about 25-30 minutes until golden brown. Add minced garlic and cook for another minute.
  3. Return short ribs to the pot along with beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Simmer covered on low heat for 2-3 hours until ribs are tender.
  4. Shred the meat and return it to the soup. Ladle into oven-safe bowls topped with toasted baguette slices and cheese.
  5. Broil until cheese is melted and bubbly, then serve hot.
