Ingredients

  • 200g self-raising flour
  • 170g Greek yoghurt
  • 100g feta, crushed
  • 2 tbsp cream cheese
  • Handful of mint leaves, finely chopped
  • 100g spinach, wilted, squeezed, and chopped
  • 2 garlic cloves, minced
  • 1 tsp black pepper
  • 1 tbsp mint sauce (for serving)
  • 1 tbsp olive oil (for serving)

Instructions

  1. Prepare the dough: In a large bowl, combine self-raising flour and Greek yoghurt. Mix with chopsticks or hands until combined. Knead for 5 minutes until a soft, bouncy dough forms. Cover with cling film and set aside.
  2. Make the filling: In a bowl, combine crushed feta, cream cheese, chopped mint, wilted spinach, minced garlic, and black pepper. Mix thoroughly, ensuring excess water is squeezed from the spinach.
  3. Shape the flatbreads: Briefly knead the rested dough again. Slice into 4 equal pieces. Flatten each piece gently to about 3/4 inch thickness.
  4. Fill and seal: Place a tablespoon of filling in the center of each flattened dough piece. Bring the corners together to seal the filling inside. Turn over and flatten to about 1/2 inch thickness.
  5. Cook the flatbreads: Heat a dry, non-stick frying pan over medium to high heat. Fry each flatbread for 3-5 minutes on each side until golden brown.
  6. Prepare serving sauce: While the flatbreads cook, combine mint sauce and olive oil in a small bowl for dipping.
  7. Serve: Serve the Feta Spring Flatbreads warm with the mint sauce.
