- 2 cups cooked chicken breast, shredded
- 1 cup shredded carrots
- 1 cup red bell pepper, thinly sliced
- 1 cup cucumber, thinly sliced
- 1 cup green onions, sliced
- 1 cup fresh cilantro leaves
- 1 cup crunchy Asian slaw mix
- 1/2 cup hoisin sauce
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 8 large lettuce leaves (e.g., romaine or butter lettuce)
- 1 tablespoon sesame seeds (optional)
Instructions
- If not already cooked, grill or sauté the chicken breast until fully cooked. Shred it into bite-sized pieces.
- Wash and slice the carrots, red bell pepper, cucumber, and green onions. Set them aside.
- In a small bowl, combine hoisin sauce, soy sauce, and sesame oil. Stir well to create a smooth sauce.
- In a large bowl, toss the shredded chicken with the sauce until evenly coated.
- Gently fold in the shredded carrots, bell pepper, cucumber, green onions, and crunchy Asian slaw mix.
- Take a lettuce leaf and spoon a generous amount of the chicken and vegetable mixture into the center.
- Sprinkle sesame seeds on top for added crunch, if desired.
- Fold the sides of the lettuce leaf over the filling and then roll it up from the bottom to create a wrap.
- Continue the process until all the filling is used.
- Enjoy the wraps fresh for the best texture and flavor.
