Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded carrots
  • 1 cup red bell pepper, thinly sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup green onions, sliced
  • 1 cup fresh cilantro leaves
  • 1 cup crunchy Asian slaw mix
  • 1/2 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 8 large lettuce leaves (e.g., romaine or butter lettuce)
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. If not already cooked, grill or sauté the chicken breast until fully cooked. Shred it into bite-sized pieces.
  2. Wash and slice the carrots, red bell pepper, cucumber, and green onions. Set them aside.
  3. In a small bowl, combine hoisin sauce, soy sauce, and sesame oil. Stir well to create a smooth sauce.
  4. In a large bowl, toss the shredded chicken with the sauce until evenly coated.
  5. Gently fold in the shredded carrots, bell pepper, cucumber, green onions, and crunchy Asian slaw mix.
  6. Take a lettuce leaf and spoon a generous amount of the chicken and vegetable mixture into the center.
  7. Sprinkle sesame seeds on top for added crunch, if desired.
  8. Fold the sides of the lettuce leaf over the filling and then roll it up from the bottom to create a wrap.
  9. Continue the process until all the filling is used.
  10. Enjoy the wraps fresh for the best texture and flavor.
