Description

Ingredients

  • 4 strips turkey bacon
  • 1/2 medium onion (chopped small)
  • 3 sticks celery (chopped small)
  • 2 medium carrots (peeled & chopped small)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups frozen or fresh corn
  • 2 large Russet potatoes (peeled & diced)
  • 1/4 teaspoon Italian seasoning
  • Salt & pepper (to taste)

Instructions

  1. Cut turkey bacon into small pieces and cook in a large pot over medium-high heat until crispy, about 10 minutes. Remove and set aside.
  2. In the same pot, sauté chopped onion, celery, and carrots in the rendered fat for about 5 minutes until softened.
  3. Stir in minced garlic and cook for an additional 30 seconds before adding flour; mix well for about a minute.
  4. Gradually pour in chicken broth while stirring to avoid lumps, scraping any browned bits from the bottom.
  5. Add heavy cream, corn, diced potatoes, Italian seasoning, and most of the cooked turkey bacon (reserve some for garnish). Bring to a boil then reduce heat to simmer gently.
  6. Cook for 15–20 minutes until potatoes are tender, stirring occasionally.
  7. Season with salt and pepper to taste before serving hot, garnished with remaining turkey bacon.
