Ingredients
- Cooking oil
- Boneless skinless chicken breast (cut into strips)
- Colorful peppers (sliced)
- Onion (sliced)
- Fajita seasoning
- Water
- Prepared cilantro lime rice
- Sour cream
- Shredded Monterey Jack cheese
- Large tortillas
Instructions
- Heat cooking oil in a skillet over medium-high heat and add chicken strips. Cook until no longer pink.
- Add sliced peppers and onion to the skillet, cooking for an additional 3 to 5 minutes while stirring frequently.
- Stir in water and fajita seasoning until well combined; cover until ready to assemble wraps.
- Prepare rice according to package instructions and mix with sour cream in a bowl.
- On a large tortilla, place rice mixture, followed by the chicken mixture and shredded cheese.
- Roll the tortilla tightly from the bottom upwards after tucking in the sides.
- Optionally, toast the wraps in a pan with oil until golden brown.
