Ingredients

  • 1 pound ground beef
  • ¾ cup chopped onion
  • ¾ cup shredded carrots
  • ¾ cup diced celery
  • 4 tablespoons butter
  • 3 cups chicken broth
  • 4 cups diced potatoes
  • 12 ounces pepper jack Velveeta
  • 1½ cups milk
  • ¼ cup sour cream

Instructions

  1. In a large saucepan over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
  2. In the same pan, melt 1 tablespoon of butter and sauté onion, carrots, celery, basil, and parsley until tender. Add minced garlic and cook until fragrant.
  3. Pour in chicken broth and add diced potatoes. Return browned beef to the pot; bring to a boil, then reduce heat to simmer for about 10–12 minutes until potatoes are tender.
  4. In a small skillet, melt remaining butter; whisk in flour and stir until bubbly. Add this mixture to the soup and bring back to a boil while stirring continuously.
  5. Reduce heat to low; stir in Velveeta cubes, milk, salt, and pepper until cheese melts completely. Remove from heat and mix in sour cream.
