- ¾ cup chopped onion
- ¾ cup shredded carrots
- ¾ cup diced celery
- 4 tablespoons butter
- 3 cups chicken broth
- 4 cups diced potatoes
- 12 ounces pepper jack Velveeta
- 1½ cups milk
- ¼ cup sour cream
Instructions
- In a large saucepan over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
- In the same pan, melt 1 tablespoon of butter and sauté onion, carrots, celery, basil, and parsley until tender. Add minced garlic and cook until fragrant.
- Pour in chicken broth and add diced potatoes. Return browned beef to the pot; bring to a boil, then reduce heat to simmer for about 10–12 minutes until potatoes are tender.
- In a small skillet, melt remaining butter; whisk in flour and stir until bubbly. Add this mixture to the soup and bring back to a boil while stirring continuously.
- Reduce heat to low; stir in Velveeta cubes, milk, salt, and pepper until cheese melts completely. Remove from heat and mix in sour cream.
