Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 1 cup brown sugar, packed
  • ¼ cup light corn syrup
  • ½ teaspoon vanilla extract
  • 2 cups milk or semi-sweet chocolate chips
  • 1 cup roasted peanuts (whole or halved)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper, leaving overhang for easy lifting.
  2. Arrange the Ritz crackers in a single, tight layer across the bottom of the prepared pan.
  3. In a saucepan over medium heat, melt the butter, then stir in brown sugar and corn syrup until smooth.
  4. Bring the mixture to a gentle boil and cook for exactly 3 minutes, stirring constantly, until thick and glossy. Remove from heat and stir in vanilla.
  5. Immediately pour the hot caramel evenly over the crackers, spreading gently to cover.
  6. Bake in the preheated oven until bubbly and fragrant.
  7. Remove from oven and sprinkle chocolate chips evenly over the hot caramel. Let sit, then spread into a smooth layer.
