- 1 cup unsalted butter (2 sticks)
- 1 cup brown sugar, packed
- ¼ cup light corn syrup
- ½ teaspoon vanilla extract
- 2 cups milk or semi-sweet chocolate chips
- 1 cup roasted peanuts (whole or halved)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper, leaving overhang for easy lifting.
- Arrange the Ritz crackers in a single, tight layer across the bottom of the prepared pan.
- In a saucepan over medium heat, melt the butter, then stir in brown sugar and corn syrup until smooth.
- Bring the mixture to a gentle boil and cook for exactly 3 minutes, stirring constantly, until thick and glossy. Remove from heat and stir in vanilla.
- Immediately pour the hot caramel evenly over the crackers, spreading gently to cover.
- Bake in the preheated oven until bubbly and fragrant.
- Remove from oven and sprinkle chocolate chips evenly over the hot caramel. Let sit, then spread into a smooth layer.
- While the chocolate is still soft, gently press the peanuts into the surface for that perfect crunch.
- Refrigerate until fully set, then lift out and slice into neat bars.
