Breakfast Poutine with Hollandaise Sauce is a hearty dish featuring crispy fries, cheese curds, poached eggs, and rich hollandaise.

- 4 large russet potatoes, cut into fries
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 large eggs
- 1 cup cheese curds (or shredded cheese)
- 1 cup gravy (homemade or store-bought)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the cut potatoes in olive oil, salt, and pepper. Spread them out on the prepared baking sheet in a single layer.
- Bake the fries for 30-35 minutes, turning halfway through, until golden brown and crispy.
- While the fries are baking, prepare your gravy according to package directions or your preferred recipe.
- In a pot of simmering water, create a gentle whirlpool. Crack each egg into a small bowl, then gently slide it into the water. Cook for 3-4 minutes for a runny yolk or longer for firmer yolks. Remove with a slotted spoon and drain on a paper towel.
- In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted butter until the sauce is thick and creamy. Season with salt and cayenne pepper (if using).
- On a plate, layer the crispy fries, followed by the cheese curds. Pour hot gravy over the top, allowing the cheese to melt slightly.
- Place the poached eggs on top of the gravy-covered fries.
- Generously drizzle hollandaise sauce over the assembled dish.
- Enjoy the breakfast poutine while it’s hot and fresh.
