Ingredients

  • 4 large russet potatoes, cut into fries
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 large eggs
  • 1 cup cheese curds (or shredded cheese)
  • 1 cup gravy (homemade or store-bought)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the cut potatoes in olive oil, salt, and pepper. Spread them out on the prepared baking sheet in a single layer.
  3. Bake the fries for 30-35 minutes, turning halfway through, until golden brown and crispy.
  4. While the fries are baking, prepare your gravy according to package directions or your preferred recipe.
  5. In a pot of simmering water, create a gentle whirlpool. Crack each egg into a small bowl, then gently slide it into the water. Cook for 3-4 minutes for a runny yolk or longer for firmer yolks. Remove with a slotted spoon and drain on a paper towel.
  6. In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted butter until the sauce is thick and creamy. Season with salt and cayenne pepper (if using).
  7. On a plate, layer the crispy fries, followed by the cheese curds. Pour hot gravy over the top, allowing the cheese to melt slightly.
  8. Place the poached eggs on top of the gravy-covered fries.
  9. Generously drizzle hollandaise sauce over the assembled dish.
