Description

Enjoy these easy blueberry blondies, a delightful dessert with a soft, chewy texture and bursts of fresh blueberry flavor, finished with a bright lemon glaze. Perfect for any occasion, these blondie bars are simple to make with pantry staples.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl or on the stove. Let it cool slightly.
  3. In a large bowl, whisk together the melted butter, granulated sugar, egg, and vanilla extract until smooth.
  4. Gently fold in the flour, salt, and lemon zest until just combined. Do not overmix.
  5. Carefully fold in the blueberries.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  8. While the blondies are baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
  9. Let the blondies cool completely in the pan before drizzling with the lemon glaze.
  10. Cut into bars and serve.

Notes

  • Use fresh or frozen blueberries. If using frozen, toss them with a teaspoon of flour before adding to the batter to prevent bleeding.
  • For a vegan option, use vegan butter and a flax egg (1 tbsp flaxseed + 3 tbsp water, let sit for 5 minutes).
  • Coconut sugar or light brown sugar can be used instead of granulated sugar for a caramel-like flavor.
  • A gluten-free 1:1 flour blend can be substituted for all-purpose flour.
  • If you don’t have lemon, orange zest and juice can be used for the glaze.
  • These blueberry blondies freeze well. Store in an airtight container for up to 3 months.
