Ingredients
Scale
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon lemon zest
- 1 cup fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
- Melt the butter in a microwave-safe bowl or on the stove. Let it cool slightly.
- In a large bowl, whisk together the melted butter, granulated sugar, egg, and vanilla extract until smooth.
- Gently fold in the flour, salt, and lemon zest until just combined. Do not overmix.
- Carefully fold in the blueberries.
- Spread the batter evenly into the prepared baking dish.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- While the blondies are baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.
- Let the blondies cool completely in the pan before drizzling with the lemon glaze.
- Cut into bars and serve.
Notes
- Use fresh or frozen blueberries. If using frozen, toss them with a teaspoon of flour before adding to the batter to prevent bleeding.
- For a vegan option, use vegan butter and a flax egg (1 tbsp flaxseed + 3 tbsp water, let sit for 5 minutes).
- Coconut sugar or light brown sugar can be used instead of granulated sugar for a caramel-like flavor.
- A gluten-free 1:1 flour blend can be substituted for all-purpose flour.
- If you don’t have lemon, orange zest and juice can be used for the glaze.
- These blueberry blondies freeze well. Store in an airtight container for up to 3 months.
