An Incredible Ultimate Recipe for a BLT Pasta Salad Sandwich.

- 8 ounces rotini pasta
- 6 slices of bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices of your favorite bread (to make sandwiches)
- Additional toppings (optional): avocado slices, cheese, or pickles
Instructions
- In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a medium bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- In a large mixing bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, and chopped romaine lettuce.
- Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- For optimal flavor, cover the bowl and refrigerate the pasta salad for at least 30 minutes.
- Lay out the slices of bread. Spoon a generous amount of the BLT pasta salad onto half of the slices. If desired, add additional toppings like avocado or cheese.
- Place the remaining slices of bread on top to create sandwiches. Cut in half if desired and serve immediately or store in the refrigerator until ready to enjoy.
