Ingredients

  • 8 ounces rotini pasta
  • 6 slices of bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices of your favorite bread (to make sandwiches)
  • Additional toppings (optional): avocado slices, cheese, or pickles

Instructions

  1. In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a medium bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  3. In a large mixing bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, and chopped romaine lettuce.
  4. Pour the dressing over the pasta mixture and toss gently until everything is well coated.
  5. For optimal flavor, cover the bowl and refrigerate the pasta salad for at least 30 minutes.
  6. Lay out the slices of bread. Spoon a generous amount of the BLT pasta salad onto half of the slices. If desired, add additional toppings like avocado or cheese.
