Description

Ingredients

  • 2 teaspoons apple pie spice
  • 2 large eggs (beaten)
  • 2 tablespoons vegetable oil
  • ½ cup apple cider (or apple juice)
  • ¼ cup whole milk
  • ¼ cup unsalted butter (melted)
  • Additional sugar and apple pie spice for coating

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and apple pie spice.
  3. In another bowl, whisk the eggs, vegetable oil, apple cider (or juice), and milk until well combined.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 20–22 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool slightly before rolling in melted butter and then in a cinnamon-sugar mixture for added sweetness.
