Ingredients

  • 8 ounces of spaghetti or your preferred pasta
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 pound salmon fillets (skinless)
  • Salt and pepper, to taste
  • ½ cup heavy cream
  • 1 lemon, juiced and zested
  • ¼ cup fresh parsley, chopped
  • ¼ teaspoon red pepper flakes (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water and then drain the pasta.
  2. Season the salmon fillets with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Place the salmon fillets in the skillet, cooking for about 4-5 minutes on each side or until cooked through. Remove the salmon from the skillet and let it rest for a few minutes before flaking it into bite-sized pieces.
  5. In the same skillet, add the heavy cream, lemon juice, and lemon zest. Stir to combine and let it simmer for 2-3 minutes.
  6. Add the cooked pasta to the skillet with the sauce, along with the flaked salmon and chopped parsley. Toss everything together, adding reserved pasta water as needed to reach your desired sauce consistency.
  7. Taste the dish and adjust seasoning with additional salt, pepper, or red pepper flakes if desired.
  8. Divide the Salmon Pasta among plates and sprinkle with grated Parmesan cheese, if using.
